Home-cooked meals can boost your health — and protect your wallet. Try these cooking tips:
• A hot tip for freezing. Fresh vegetables will freeze better if you blanch them first. Bring water to a boil and drop in the veggies for a few minutes. Cool them quickly and thoroughly in an ice water bath for a few minutes. This enhances flavor while preserving color, texture and nutrients.
• Buy smartly. A 5-pound bag of potatoes isn't a bargain if you only need one. They don't freeze successfully.
• Add water, not fat. When you sauté onions, use a bit of olive oil or maybe a touch of butter for taste. As the onions start to cook, add water instead of more fat.
• Cook once, eat twice. Skip the salt and cost of a can of beans by cooking your own dried beans. Store them in the freezer in 1-cup containers or plastic bags.
