Sure, salad can be a healthy meal. But, there are leafy greens besides lettuce that pack even more vitamins per veggie. Give these greens a go:
--Kale. An excellent source of vitamins A and C, kale has a mild cabbage taste and a delicate texture. It’s perfect for soups and stews and can even be made into chips!
--Spinach. A low-calorie favorite rich in Vitamins A and C and magnesium, spinach can be cooked with meat or fish or served raw on sandwiches.
--Collard greens. Loaded with calcium, fiber and vitamins A and C, collard greens are traditionally simmered with ham or pork fat. Cut the fat by boiling them with roast turkey instead.
--Swiss chard. Rich in protein, fiber and other nutrients. Swiss-chard can be saved for later. After it’s blanched or dipped in boiling water for two minutes and then chilled in ice water, Swiss chard can be frozen in an airtight container.
