Only 20% of Americans eat five or more daily servings of fruits and vegetables per day. Yet it’s simple to add these vital nutrients to your meals. Try these busy-morning ideas are so easy, the kids can help, too:
- On cold winter mornings, try adding sliced banana, berries, prunes, raisins or other fruit to a bowl of hot oatmeal.
- Mix berries or sliced apples or bananas into pancake or waffle batter. Top with extra fruit.
- Create a veggie omelette with onions, tomatoes, peppers or any other combo. Top the finished omelette with a bit of salsa.
- Try an open-faced breakfast sandwich. Spread toasted bread with low-fat ricotta cheese. Top with fresh blueberries or sliced banana, melon or strawberries.
