Serving Size: 1 Slice
Ingredients:
- 3 3/4 cup all-purpose flour
- 3 1/2 tsp baking powder
- 1/4 cup sugar
- 1 1/2 tsp salt
- 1 1/4 cup evaporated (fat-free skim milk)
- 1/3 cup margarine, melted
- 2 large eggs or 1/2 cup egg substitute
- 2 tsp orange zest, grated
- 1/2 cup raisins, chopped
Directions:
1. Ask an adult to preheat the oven to 350 F. Coat a 9 x 5-inch loaf pan with nonstick cooking spray.
2. In a large bowl, combine the flour, salt, baking powder and artificial sweetener; mix well.
3. In a separate bowl, mix together the milk, margarine, eggs and orange zest.
4. With the help of an adult, pour the wet ingredients into the bowl with the dry ingredients; mix until just blended.
5. Stir in the raisins.
6. Pour the batter into the loaf pan.
7. Have an adult put the loaf in the oven and bake for 65 minutes.
8. Have an adult remove the loaf from the oven; cool for 1 hour.
9. Slice, serve and enjoy!
